不裱花也能给戚风酸奶蛋糕来个华丽变身----伪黑森林蛋糕的诞生过程
两年前一开始写博客的时候内容主要就是烘焙，那时处于实践阶段，失败多于成功啊!我一直记得我家好男儿满心欢喜地看我做面包和蛋糕，但是烤完后的面包一吃是个大馒头，蛋糕么也没有发起来，里面还是湿漉漉的，都很难吃啊
1.做蛋糕最重要的还是要打发好蛋白,所以细节很重要,打蛋的器皿不要油腻,必须是干爽的,打发的时候加点醋可以让蛋白可以马上起泡;
2.蛋白打发的时候白糖最好分三次加,这样主要是让蛋白打发更容易,否则就要费力点,因为一次性加白糖会妨碍蛋白的起泡;
3.蛋白打发到什么时候可以了?这个判断方法其实也不难,打发的过程中可以用电动打蛋器不时提几下看看蛋白,如果是弯曲的就要继续打,一直要打到拉起来蛋白可以成直角状那就可以停止了;
4.传说中搅拌蛋白和蛋黄糊要小心翼翼,因为一不小心就会把打发的蛋白消泡了?其实大可不必,只要你不打圈搅拌就可以,那么传说中的左右上下搅拌到底是什么动作,这个我告诉大家,就是炒菜的动作,你就把蛋白和蛋黄糊看做是锅里的菜,你想你炒菜的时候很小心吗?这个尺度应该很好好把握;
5.蛋白和蛋黄糊一定要搅拌均匀,这样蛋糕口感才好；
6.我用的是水浴发，这样做出的蛋糕口感好，不发干；
7.烤蛋糕的时候最好把磨具放在最下面一层或者倒数第二层，因为蛋糕的烤制时间比较长，而且戚风蛋糕还会膨胀，如果放在上面，距离顶层近容易焦；
8.150度烤一个小时的蛋糕肯定是熟了，我看用牙签这种方法也不怎么行得通，还是摸透自己烤箱状况比较行得通。
我这个蛋糕的好处是随吃随涂，撒点巧克力碎就可以，没有那么讲究，所以不仅可以涂奶酪，你完全可以尝试别的水果酱，或者花生酱什么，这样的吃法才丰富！最重要的是不用花时间裱花啊哈哈!
