用古法做江南经典名吃甜酒酿
牢记几点:
1.米饭不能煮的太软,那样最后成品会变成米糊,口感不好;
2.在放酒曲粉前,一定要把糯米饭吹凉了,和手温差不多就可以,如果米饭是烫的时候放入酒曲粉,里面的灰霉菌和酵母菌会被烫死了,没法发酵了啊;
3.放糯米饭的容器,你的手和擀面杖一定要洗干净后让其干燥,不可有油腻或者生水,否则会发霉长毛,如果你发现表面长的霉菌是五颜六色的那绝对是不可以吃了,但有时候冬天发酵时间过长会长白毛,那关系不是很大的;4.现在这个季节做正好,不需要保温,直接室温做就可以,24到36个小时即可放凉开水,入冰箱冷藏可以吃了;
5.加入冷水后放入冰箱就是减缓其发酵过程,因为任期在室温继续发酵,糯米就会发酵空,那时侯酒的浓度上去了,时间久了就成了米酒了啊,所以有人为了阻止其继续发酵成米酒,就把做好的酒酿再蒸一下,里面的菌类杀死了就不会继续发酵了;
6.为什么在糯米中央打个酒窝?其实这就是用来观察酿制的进度,如果中间有酒渗出到米饭一半高度说明可以放冷开水了,水量一般是和米饭的重量一样,加的时候一般都是凭感觉,不要超过米饭的三倍高度即可;
7.酿制过程中可以打开盖子看看,有酒香味说明没有问题;
8.我用了薄荷,这是我独创的做法,薄荷味的酒酿估计没人尝过吧!
酒酿怎么会那么甜?这糖就是来自米饭里的啊!如果你做出的酒酿很酸,那么说明发酵环节出了问题啊!加了薄荷的,味道真好!

我们又何尝不是如此呢?我们心浮气躁地打造生活,蓦然回首,才瞠目结舌地发现自己正住在自己建造的那所房子中,自食苦果。“生活正如一项为自己打造的工程。”还有什么比这更清楚的呢?明日的生活,孕育于你今天的态度和抉择之上。
An elderly carpenter was ready toretire. He told his employer of his plans to leave the housebuilding business and live a more leisurely life with his wifeenjoying his extended family. He would miss the paycheck, but heneeded to retire. They could get by.
The employer was sorry to see hisgood worker go and asked if he could build just one more house as apersonal favor. The carpenter said yes, but in time it was easy tosee that his heart was not in his work. He resorted to shoddyworkmanship and used inferior materials. It was an unfortunate wayto end his career.
When the carpenter finished hiswork and the employer came to inspect the house and handed thefront-door key to the carpenter. "This is your house," he said, "mygift to you."
What a shock! What a shame! If hehad only known he was building his own house, he would have done itall so differently. Now he had to live in the home he had builtnone too well.
So it is with us. We build ourlives in a distracted way, reacting rather than acting, willing toput up less than the best. At important points we do not give thejob our best effort. Then with a shock we look at the situation wehave created and find that we are now living in the house we havebuilt. If we had realized, we would have done itdifferently.
Think of yourself as thecarpenter. Think about your house. Each day you hammer a nail,place a board, or erect a wall. Build wisely. It is the only lifeyou will ever build. Even if you live it for only one day more,that day deserves to be lived graciously and with dignity. Theplaque on the wall says, "Life is a do-it-yourself project." Whocould say it more clearly? Your life tomorrow will be the result ofyour attitudes and the choices you make today.
